Job Description

We are accepting applications for the following position

LINE COOK (SUSHI)

RESPONSIBILITIES

  • Create a sushi menu of items which complement and contribute to a diverse restaurant menu, blending traditional and innovative dishes to cater to a wide range of tastes.
  • Prepare and assemble sushi dishes; maintain consistent recipe and presentation standards.
  • Assemble and plate sushi in an aesthetically pleasing and consistent manner.
  • Select and prepare fresh ingredients, including slicing and filleting fish, and preparing sushi rice to ensure the highest quality.
  • Maintain a clean and well- organized sushi station, ensure ingredients are properly stored and rotated for freshness.
  • Liaise with internal teams, share knowledge, and foster a positive and supportive team environment.
  • Collaborate with the culinary team to coordinate and prioritize orders, ensuring timely and accurate delivery of sushi dishes.
  • Regularly inspect and maintain sushi knives, tools, and kitchen equipment, reporting any malfunctions.
  • Remain up to date with sushi trends and techniques.
  • Perform inventory audits on a regular basis and keep accurate records. Contribute to streamlining inventory levels and control food costs.
  • Comply with food hygiene and health and safety regulations.

QUALIFICATIONS

  • Minimum three (3) years’ experience in a high-volume restaurant environment as Line cook with proven experience as a Sushi Chef.
  • 2 year degree from an accredited university in Culinary Arts.
  • Excellent knife skills and proficiency in various sushi techniques, including cutting, slicing, rolling, and shaping.
  • Strong knowledge of various sushi ingredients, including their characteristics and seasonality.
  • Familiarity with different sushi styles, such as nigiri, maki, sashimi, and temaki.
  • Strong attention to detail and creativity.
  • Ability to handle and prepare raw fish and seafood safely and responsibly.
  • Possess strong multi-tasking abilities and able to work well in an environment with time constraints.
  • Detail-oriented with good organizational skills, performing work accurately and efficiently.
  • Demonstrate excellent communication and interpersonal skills.
  • Must maintain a professional image.
  • Ability to lift 50lbs; sit, stand, walk for an extended period of time.
  • Must be comfortable working a flexible schedule and have the ability to work outside of normal business hours including evenings, weekends and public holidays, as needed
